Super Crunchy Caramel Corn

6 to 8 quarts popped corn
1 c. butter
2 c. firmly packed brown sugar
½ c. Karo syrup
1 tsp. salt
½ tsp. baking soda
1 tsp. vanilla
Melt butter. Stir in sugar, corn syrup and salt. Bring to a boil stirring constantly. Then boil (full boil) without stirring for 5 minutes. Remove from heat. Add soda and vanilla. Beat until foamy. Gradually pour over corn. Bake in 250° oven for 1 hour. Stir every 15 minutes. Pour immediately on parchment to cool, before it hardens. Store in tightly covered dish.
