Superfood Waffles & Nice Cream

These healthy superfood gluten free waffles are a fun breakfast any day of the week. Dress them up with a scoop of dairy free, fruit and veggie based "ice cream" for an extra special treat!

Pumpkin Waffles:
2 eggs
1/2 cup almond milk ( unsweetened )
1/4 cup greek yogurt
1 tablespoon date paste ( or sub honey or maple syrup )
1 tablespoon coconut oil ( melted )
1/2 teaspoon baking soda
1/4 teaspoon sea salt
3/4 cup oat flour
1/4 cup Glean pumpkin flour
Raspberry Beet Superfoods Ice Cream:
1 banana ( quartered and frozen )
1 cup mango ( frozen )
1 cup raspberries ( fresh or frozen )
1/3 cup coconut milk ( full fat or sub almond milk )
1 tablespoon Glean beet flour
  • To make waffles, add the eggs, yogurt, almond milk, date paste (or honey), coconut oil, salt and baking soda to a mixing bowl. Mix well.
  • Add the oat and pumpkin flours, and stir to combine....
