Sure-Fire Popovers

A light fluffy bread made from an egg batter. Perfect breakfast food, but also goes with lunch or dinner!

2 eggs
1 cup all-purpose flour
1 cup milk (warmed 30 seconds in microwave)
1/2 tsp salt
2 tbsp melted butter
Heat oven to 425°F. Add 1/2 tsp to each of the 12 sections of your muffin pan. Beat eggs gently. Beat in remaining ingredients just until smooth (do not overbeat Put muffin pan in the oven on a cookie tray for about 2 minutes til the butter starts to sizzle. Fill cups about 1/2 full. Bake 15 minutes Reduce oven temperature to 350ºF. Bake about 15 minutes longer or until deep golden brown. Immediately remove from cups. Serve hot.
