These super easy to make Sweet Potato and Lentil Patties are a great way to incorporate some more veggies into your diet.

1 cup uncooked red lentils
3 cups of water (for cooking lentils)
2 large carrots (grated)
1 large sweet potato (grated)
1 small red onion (chopped)
2 tablespoons chopped parsley
1 cup quinoa flour
1 tablespoon olive oil
1/2 teaspoon salt
1/3 teaspoon black pepper
