This healthy Sweet Potato Breakfast Casserole with eggs, bacon, veggies and spinach is a perfect way to feed a crowd during the holidays.

1 pound sweet potatoes
2 tbsp water
1 onion
3 garlic cloves
1 bell pepper
3 cup baby spinach
10 eggs
1/3 cup milk
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne
2 grenn onions
1 cup cherry tomatoes
2 cups shredded cheese
