Sweet Potato Casserole with Pineapple and Marshmallows

A delicious combination of sweet potatoes, pineapple and marshmallows.

6 medium sweet potatoes
8 tablespoons unsalted butter, cubed
3/4 cup granulated sugar
1- 20 ounce can crushed pineapple, drained
2 eggs, beaten
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1 package marshmallows
