Sweet Potato & Coconut Soup

This delicious sweet potato soup recipe makes a fantastic healthy lunch or starter. It’s super quick and easy to make and tastes sublime. When making this soup I decided not to peel the sweet potatoes as there’s so much nutrition in the skin, however if you prefer you can peel yours. This recipe also calls for vegetable broth, you can find a great easy recipe for that here or alternatively use some vegetable bouillon.

4 x sweet potatoes
1 x 400ml can coconut milk
700ml veg broth
1/2 onion
2 cloves garlic, crushed
2 tbsp. nutritional yeast
1 tbsp. chilli flakes
2 tbsp. cinnamon
2 tbsp. paprika
1cm grated ginger

Optional: fresh coriander and chopped brazil nuts to serve
