Sweet Potato Crust Quiche

Sweet Potato Crust:
1 teaspoon olive oil
1 large sweet potato
seasalt and freshly ground pepper ( to taste )
Quiche:
2 teaspoons olive oil
1 onion
seasalt to taste
8 eggs
1/2 cup spinach ( frozen, or use 4 cups fresh )
1/3 cup parmesan cheese ( shaved or grated, omit if necessary )
1/2 teaspoon italian seasoning
1/4 teaspoon seasalt
freshly ground pepper ( to taste )
  1. Preheat oven to 425ºf.
  2. Shred the sweet potatoes (peeling the sweet potato first is optional). I do this in my food processor, and it takes seconds.
