Sweet Potato Soufflé

2 lb. sweet potatoes, peeled and cut into 1-inch cubes
8 garlic cloves, unpeeled
2 T olive oil
6 oz. Gruyère cheese, shredded
1 oz. Parmigiano-Reggiano cheese, grated
4 T (1/2 stick) unsalted butter
¼ cup all-purpose flour
1 cup whole milk
4 egg yolks
6 egg whites
1 ½ teaspoons finely chopped fresh flat-leaf parsley
1 ½ teaspoons finely chopped fresh chives
