A delicious Sweet Potato Waffle Breakfast Sandwich – a great gluten free option! Homemade sweet potato waffles are layered with avocado, sausage, and eggs, for the perfect breakfast indulgence!

2 sandwiches
3 cups sweet potato ( shredded )
2 eggs
2 tablespoons coconut flour
1 tablespoon arrowroot flour
1/2 teaspoon sea salt
black pepper ( to taste, optional )
