Sweet & Sour Pomegranate Thai Chicken Enchiladas

These Thai flavoured enchiladas are a party in your mouth. The perfect blend of your favourite Mexican dish with a sweet & sour twist. The pomegranate is such a surprising burst of flavour these will leave you craving Mexican/Thai for days after you try them!
1 1/2 cups sweet Thai chili sauce
1/2 cup soy sauce
1/3 cup dark brown sugar
1 tablespoon peanut butter
1 tablespoon tomato paste
3/4 cup pomegranate juice
1/4 cup rice vinegar
Juice of 1 lime
1 teaspoon fish sauce
2 cloves garlic, pressed
1 inch fresh ginger, grated
2 cups cooked chicken, shredded
2 bell peppers sliced thin
1/3 cup cilantro, chopped
1 1/2 cups mozzarella cheese, shredded
10 Flour Tortillas
Sliced avocado, pomegranate arils, and chopped cilantro, for serving
