Szechuan Sauce Recipe

Schezwan Sauce is a special spicy sauce used in Schezwan recipes like Schezwan Fried Rice, Noodles etc.

12 in whole dry kashmiri red chillies soakedwarm for 15 minutes
2 tbsp chopped garlic lehsun
4 tbsp white vinegar
2 tsp sugar
2 tbsp Sesame oil til
1 tsp Salt
Drain out all the water from the chillies and discard it. Combine all the ingredients in a mixer except the oil and blend into a fine paste. Transfer into a bowl and keep aside. Heat the oil to smoking point and pour over the chilli-garlic paste. Mix well, allow it to cool and store refrigerated in an air-tight container. Uses as required.
