For the marinade:
2 lbs pork shoulder ( cut into 1/4 inch thick slices )
2 tsp garlic ( chopped )
1 tsp dried oregano leaves
1 tsp ground cumin
1 tsp salt
1/4 tsp pepper
4 dried guajillo chiles ( seeds and stems removed then softened in very hot water for 5 minutes )
1 tbs Agave In The Raw
1/4 cup pineapple juice
1/4 cup white vinegar
2 tbsp achiote paste

12 corn tortillas ( warmed )
1 pineapple ( peeled and cut into 1/2 inch thick slices )
1/4 cup red onion ( diced )
1/4 cup cilantro leaves ( minced )
