Regardless of the funny history of how Mexican burrito came to be. It certainly caught on quickly and has evolved a great deal since it was first created. A flavor-bomb meal with rice, beans, meat, cheese, vegetables, and sauces wrapped up in a tortilla.

Shitake mushrooms are a good source of protein. They would be a tasty addition to this dish. You can also add a good teaspoon of the best barbecue sauce in town. You can mix and match your burrito filling to your liking. Imagination and creativity are all you need.

1 tbsp vegetable oil
1 oz onions
17 oz ground pork
1 tsp chili powder (Taco Seasoning)
1 tsp Smoked paprika (Taco Seasoning)
(1/2 tsp) cumin (Taco Seasoning)
(1 tsp) cayenne pepper (Taco Seasoning)
1 tsp dried oregano (Taco Seasoning)
1 cup green enchilada sauce
6 eggs
4 cups cooked brown rice
8 whole-grain tortillas (10-inch)
1 cup shredded cheddar
1/2 cup grated Parmesan
1 cup beef stock
Salt and pepper to taste
1/2 cup sour cream

  1. Add oil in a heated pan and sauté minced onions.
  2. Sauté until translucent. Stir in ground pork until brown.
