Here is a fantastically delicious healthy version of Panera Bread's Broccoli Cheddar Soup. It is just as creamy and cheesy as Panera Bread's, but much healthier!

Ingredients::
1 Tablespoon Light Whipped Butter
1 Onion ( Diced Small )
3 Celery Stalks ( Diced Small )
1 Cup Shredded Carrots
1/4 Cup Light Whipped Butter ( Melted )
1/4 Cup White All Purpose Flour
1 Cup Skim Milk
1 Cup 1% Milk
2 Cups Chicken Broth
3 Cups Fresh Broccoli ( Chopped Small )
2 Cups Fat Free Shredded Cheddar Cheese
Pinch Salt
Pinch Pepper
1/4 Teaspoon Ground Nutmeg

Getting your kids to eat is always a challenge! Today we are sharing a simple, easy dinner recipe that is kid friendly. My kids had so much fun making these Yummy Dino Buddies with me. We paired them with mashed potatoes, gravy and broccoli to make a fun mashed potato volcano with gravy and the lava and broccoli as the trees. They got to play with their food, they devoured the meal and I was left smiling!
