A healthy and Weight Watchers friendly leftover ham recipe!

My family eats rice every week and we love it. I look forward to having leftover rice in the fridge because that means ham fired rice! My wife is the very best at turning plain white rice into a pallet-pleasing masterpiece. With bacon, veggies and eggs, it has a little bit of everything. It goes with so many dishes and kids love it. Next time you have leftover rice, whip up a batch – you will be glad you did.

2 cups uncooked rice ( cooked and chilled )
¼ lb. bacon ( diced, reserve oil )
2 eggs ( slightly beaten )
3 green onions ( chopped )
8 oz. frozen veggies ( peas, carrots etc )
¾ c diced ham
Dark Chinese soy sauce to taste
