Try this quick and easy baked red snapper recipe. It works for a busy weeknight or just a simple dinner idea for the family. This healthy meal idea is a perfect treat for those who want to eat a delicious fish recipe without breaking a sweat in the preparation.

The terms baking and roasting are often used interchangeably when applied to fish and shellfish. One disadvantage of baking fish is the short baking time does not allow the surface of the fish to caramelize. To help correct this problem, fish can be seared in a sauté pan or the broiler with a small amount of oil. Then finish the fish in the oven.

32 oz Red snapper fillets
1/2 cup melted butter
2 cloves garlic
4 oz cherry tomatoes
