1 zucchini ( chopped )
1 red bell pepper ( diced )
8 spears asparagus ( chopped )
1 1/2 cup sliced mushrooms
2 garlic cloves ( minced or pressed )
1 1/2 Tbsp olive oil
8 eggs
1/3 cup buttermilk
1 tsp sea salt ( or to your taste )
1/4 tsp fresh ground black pepper ( or to your taste )
a small bunch of parsley ( chopped )
1/3 cup crumbled feta cheese
1 cup cherry tomatoes ( halved )
