. This jerk Chicken Recipe uses a simple marinade. I use cayenne powder instead of handling hot pepper. I added cinnamon, dried thyme, ground black pepper, smoked paprika,ground cloves, ground ginger, and brown sugar to contrast the spicy taste.

10 chicken legs
1/3 cup olive oil
2 tbsp light brown sugar ( packed )
1 tbsp dried thyme
2 tsp ground allspice
1 tsp smoked paprika
1 tsp ginger cinnamon
1 tsp ground ginger
1 tsp ground cloves
1 tsp cayenne pepper
2 tsp kosher salt
1/4 tsp freshly ground black pepper
