Has there ever been a more perfect combination than chocolate and mint? No, there's not. Smooth rich chocolate combined with refreshing mint is just delectable…oh, and then I decided to throw in some Oreos too for the crust.

Chocolate Ganache Cheesecake:
32 oz cream cheese ( softened to room temperature )
1 c granulated sugar
10 oz bittersweet chocolate
1/4 c cocoa
1/4 tsp salt
4 large eggs
1/2 Tbsp vanilla extract
1/2 c heavy cream
Oreo Crust:
1 package Mint Oreo cookie wafers
1/2 c butter
Mint Topping:
Cream filling from package of Mint Oreos
1 c heavy cream
1/2 Tbsp vanilla extract
1/2 c granulated sugar

Deliciously creamy mint white chocolate fudge that is loaded with flavour, stuffed full of Oreo cookies, and only requires 5 ingredients to make!

Deliciously moist and fluffy mint chocolate cake layered with silky Swiss meringue buttercream and chocolate chips!

For the Cake
3 and 3/4 cups (375g) cake flour*
3/4 cup (75 g) cocoa powder
3 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
6 large eggs ( room temperature )
2 and 1/4 cups (450g) caster/granulated sugar
3 teaspoons peppermint extract
1 and 1/2 cups (340g) unsalted butter, melted
1 and 1/2 cups (367g) Greek-style yogurt, room temperature
For the Frosting
1 cup (240 g) large egg whites ( from about 6 - 7 large eggs )
2 cups (400 g) caster/granulated sugar
2 cups (453 g) unsalted butter ( room temperature and cubed )
2 teaspoons peppermint extract
Green gel food colouring ( optional )
1 and 1/2 cups (265g) chocolate chips
