Mini Chocolate Mint Cream Pies! Mini pie shells filled with chocolate cream and mint whipped topping

Mini Pie Shells
1 Pillsbury refrigerated pie dough
Chocolate Cream Filling
1 (3.9 oz) package instant chocolate pudding mix
3 Tbls cocoa powder ( sifted )
1 cup half and half
1/2 cup milk
1 teaspoon vanilla extract
Mint Whipped Cream Topping
1 cup heavy cream
1/4 cup powdered sugar
1 tsp mint extract ( taste and add more if needed )
