Salsify is the starting point for this recipe. Yes, salsify. It's a root that tastes a bit like oysters. It'll be great in a dip with some smoked sour cream all slathered on a bit of fluffy flatbread.

1 cup diced red bell pepper
2 clove garlic
1 tbsp chopped parsley
1 tsp chopped chives
2 cups mayonnaise
2 cups sour cream
Salt and pepper to taste
- Drain cans of salsify.
- Chop vegetables into chunky bits.
- Freeze the sour cream until you can cut it for about 20-30 minutes.
- Cut cream into small chunks.
