This easy Italian wedding soup is one of my favorite noodle soup recipes! It's warm, cozy and so inviting. This hearty comfort food is filled with fabulous colors, textures and flavors. You can make a pot of this homemade Italian soup in about an hour! If there are leftovers, the flavors in the broth continue to meld together and become increasingly scrumptious.

MEATBALLS:
Ground chicken
Grated Parmesan cheese
Panko breadcrumbs
Fresh Italian parsley
Virgin olive oil
Large egg
Garlic clove
Dried onion flakes
Dried Oregano
Sea salt
Freshly-ground black pepper
Crushed red pepper flakes
NOODLE SOUP:
Virgin olive oil
Yellow onion
Baby carrots
Celery
Fresh thyme
Fresh sage
Chicken broth or chicken stock
Basil pesto
Lemon juice
Baby spinach or baby kale
Short-cut pasta
Shaved Parmesan cheese
