Turkey white bean soup with kale - Family Food on the Table
One pot meals are the best. If you need to make a dinner for scouts, youth or just a bunch of hungry children – this is a great one to try! It is warm, flavorful and super delicious. It’s a guaranteed winner.
1 T oil
2 cloves garlic ( chopped )
1 onion ( diced )
½ lb. ground beef
4 c chicken broth
1 can diced tomatoes, 14.5 oz.
¾ c white beans ( rinsed )
¾ c kidney beans ( rinsed )
2 tsp chili powder
1½ tsp. cumin
10 oz. elbow mac ( uncooked )
6 oz. Velveeta cheese ( cubed )
¾ c cheddar cheese ( grated )

This Fennel & White Bean Salad is a great side dish. Crunchy fennel, tender white beans, and sharp Romano cheese.
1 garlic clove ( minced )
1 tablespoon lemon juice ( from 1/2 lemon )
lemon zest ( from 1 lemon )
1 fennel bulb
2 scallions ( diced )
2 tablespoons parsley leaves ( diced )
2-3 tablespoons mayonnaise
1 cup cooked white beans ( such as navy beans or great northern beans )
salt and ground pepper ( to taste )
1/4 cup shredded Romano or Parmesan cheese
1 tablespoon lemon juice ( from 1/2 lemon )
lemon zest ( from 1 lemon )
1 fennel bulb

I love soup because it’s easy to make wherever you are. I first tried this soup at a local church pot luck and immediately fell in love with it. Of course, it’s not difficult to love something with sausage in it. Give it a try and let your family fall in love with it too!
1 lb mild Italian sausage
3 carrots
1 stalk celery
1 Tbsp. extra virgin olive oil
8 cups chicken broth
1 Tbsp. dried Italian seasoning
1 can white beans
1 can petite diced tomatoes
1 can tomato sauce
1 can tomato paste
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. pepper
½ lb small shell noodles
2 cups fresh basil chopped
3 carrots
1 stalk celery
1 Tbsp. extra virgin olive oil
8 cups chicken broth
1 Tbsp. dried Italian seasoning
1 can white beans
1 can petite diced tomatoes
1 can tomato sauce
1 can tomato paste
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. pepper

Using a preheated dutch oven or soup pot on a camp stove:
Cook sausage, drain, and set aside.
