Chocolate Zucchini Bread

You've absolutely got to try my Chocolate Zucchini Bread. There is no flavor of zucchini...zip, zilch, nada. All you'll taste is fluffy chocolatey goodness.

1 large egg ( at room temperature )
1/4 c butter ( melted, but not hot )
1/4 c applesauce
1-1/2 tsp vanilla extract
1/2 c light brown sugar ( packed )
1/2 c granulated sugar
2 c all-purpose flour
1/2 c cocoa
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
2 c zucchini ( peeled and finely shredded )
1 c chocolate chips ( divided )
Flaky sea salt
Vegetable shortening ( for greasing pan )

Moist, delicious and satisfying chocolate chip and peanut butter vegan zucchini bread. Pairs perfectly with your morning cup of coffee. Vegan, delicious and easy to make. Great way to use up your end of summer zucchini.

Adding coconut and chocolate chips to this sweet bread is a fun way to do zucchini bread.

2 cups flour
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 cup buttermilk
1/4 cup oil
1 egg
1 teaspoon vanilla
1 1/2 cups shredded zucchini
1 cup coconut ( optional )
1/2 cup mini chocolate chips
2 teaspoons sugar
1 cup powdered sugar
1-2 Tablespoons water

Combine the flour, sugars, baking powder, baking soda, salt, and cinnamon. Whisk together. Add the buttermilk, oil, egg, and vanilla and stir until combined. Squeeze some of the water out of the zucchini....
