A beautiful fresh and creamy salad combining salty feta, cherry tomatoes, olives and the sweet tastes of pesto and corn. This Texan Greek Salad is great served with grilled chicken.

100 g sweetcorn
25 g black olives ( sliced )
40 g cherry tomatoes ( halved )
50 g feta cheese ( crumbled )
handful rocket
14 lemon ( juice )
1 tbsp pesto
