2 cups flour
3/4 cup brown sugar plus extra
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. salt
2 cups grated carrots
2 medium apples ( peeled and chopped )
1/4 cup coconut
1/2 cup walnuts
1/4 cup raisins
1/4 cup prunes ( chopped )
3 eggs
2/3 cup oil
1/4 cup orange juice
2 tsp. vanilla
zest of 1 orange
