Thai Butternut-Squash Soup

Butternut Squash Soup with a hint of red curry and creamy coconut milk!

3 Tbsp olive oil
1 sweet onion, diced
1/4 cup red curry paste
1/4 tsp crushed red pepper flakes
1 Tbsp freshly grated ginger
8 garlic cloves, minced
3 cups uncooked butternut squash, peeled, cut into 1”cubes,
1 large sweet potato, peeled, cut into 1”cubes
3 medium carrots, peeled and chopped
4 cups vegetable stock
1 tsp salt
1/2 tsp pepper
1 (14 oz.) can quality coconut milk
1 Tbsp dried basil
