Thai Fried Noodles (Phad Thai)

This dish is very well-known even among foreigners, and popular in worldwide Thai restaurants! The shrimp in this dish can be replaced by egg, while shrimps are more suitable if the dish is for a holiday or party.

12 oz. fresh rice noodles (fresh; or 5 oz. dried ones, soaked in water for 15 minutes)
4 oz. shrimp meat (about 10 medium ones)
3 oz. tofu
3 T. vegetable oil
1/4 oz. garlic
6 T. chicken stock
1 1/2 oz. roasted peanuts
2 heads chives
3 oz. bean sprouts
4 limes (small)
2 heads coriander
2 T. sugar
3 T. fish sauce (Thai soy sauce)
1 T. soy sauce
1/4 oz. tamarind paste
1/4 tsp. salt
1/4 tsp. ground pepper
1 tsp. lime juice
Divide the shrimps and pickle with the salt, ground pepper and lime juice for 10 minutes. Blanch the shrimps in boiling water for 20 seconds. Chop the garlic and peanuts. Slice the tofu into small pieces....
