3/4 lb boneless skinless chicken breasts ( thinly sliced )
2 tbsp corn starch
1/2 cup onion ( finely chopped )
1/2 cup carrots ( peeled, quartered and sliced )
2 tsp minced garlic
2 eggs lightly beaten
3 cups cooked white rice ( long grain works best )
3 tbsp fish sauce
3 tbsp soy sauce
1 tsp sugar
salt and pepper to taste
1/4 cup green onions ( sliced )
sliced cucumbers, cilantro leaves and tomato wedges for garnish
