Thai red curry vegetables featuring cauliflower, sweet potatoes, carrots and onions cooked with white wine and simmered in coconut milk.

1 medium onion, roughly chopped
1 tablespoon ginger, minced
1 tablespoon garlic, minced
1/4 teaspoon red pepper flakes
Salt to taste
1/4 cup white wine
3 tablespoons Thai red curry paste
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 head cauliflower, cut into florets
1 large sweet potato, peeled and diced (about 2 cups)
3 medium carrots, sliced
