Thai Shrimp Noodle Soup for Two

1 tablespoon avocado oil
1 inch knob of fresh ginger, grated
3 large cloves of garlic, minced
1 stalk fresh lemongrass, thinly sliced
One pack of Thai rice noodles, cooked according to package instructions
3/4 pound of cleaned, shelled and deveined shrimps with tail on
3 tablespoons Thai Red Curry Paste
2 teaspoons fish sauce
1 can of organic coconut milk
2 1/2 cups homemade chicken stock
1/4 cup chopped cilantro, loosely packed
1 large head of bok choy, chopped
Zest of a whole lime
Juice of 1 lime or half a lemon
2 organic green onions, thinly sliced (for garnish)
Sea salt and freshly cracked black pepper, to taste
