This is a great dessert, but it’s also amazing to eat as breakfast, with a hot cup of coffee or chai tea latte. Seriously. You could also make several batches, cut in servings, freeze and you could have a perfect sweet – but not too sweet – treat at hand, whenever you want it. {Just put the slice in the oven for a few minutes} It is best to use really ripe bananas, but this last time I used bananas that I would still eat {I can’t eat really ripe fruit}, and it turned out great too. - 3 large bananas
- 1/3 cup melted butter
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon of vanilla extract

- 1 teaspoon of baking soda

- Mash the bananas before peeling them. I find it a lot easier to do like this, and quicker too! Combine the mashed bananas with the vanilla extract, using a whisk or a spatula.
