Soft pumpkin cake rolled around the creamiest coconut filling!

2/3 cup sugar, divided
1/3 cup canned pumpkin
1 teaspoon cinnamon
2/3 cup cake flour
1/4 teaspoon salt
1 teaspoon baking soda
3 tablespoon melted butter

1 cup butter
3 cups powdered sugar
1 teaspoon coconut extract
1 tablespoon of heavy cream
1 cup toasted coconut
