This classic vietnamese soup is already rich in antioxidants, vitamins, and minerals, and with the addition of beef bone broth, you get even more health benefits thanks to the beneficial protein, collagen.

4 cups beef bone broth
1 slice ginger ( thinly sliced )
1 onion ( cut into quarters )
2 sticks cinnamon
2 star anise ( pods )
1 clove garlic clove ( thinly sliced )
1/4 cup fish sauce
5 ounces rice noodles
7 ounces beef tenderloin ( sliced paper thin )
1/4 cup fresh mint leaves
1/2 lime
1 green onion ( chopped )
