The fratatta to ham and herbs

2 Green Onion (shallot) finely chopped
1 clove of garlic finely minced
1 tablespoon olive oil
4 egg
1 tablespoon fresh chives minced
1/2 cup cooked ham into cubes
1/2 cup aged cheddar cheese finely grated
pepper to taste
Step 1: In a skillet ranging from in the oven for 8 or 9 inches in diameter, pour in the olive oil, then cook the green onions and garlic on medium heat, until they have softened. Step 2: In a bowl, whisk the eggs, chives and pepper. Add this mixture in the skillet, without shuffling. Cook for 2 minutes. Step 3: Preheat the oven to grill. Step 4: Add the ham and cook, without shuffling, approximately 8 minutes, until the contour of the fratatta is cooked, but that the center is still liquid. Step 5: Sprinkle the fratatta of aged cheddar cheese and cook under the grill of the oven for about a minute. Step 6: Cut and serve.
