2 lbs. Double 8 Cattle Company Fullblood Wagyu Ground Beef
1 lb. Ground Pork
1 Large Yellow Onion ( diced )
6 Garlic Cloves ( minced )
2 tbsp. Chili Powder
1 tbsp. Ancho Chile Powder
2 tsp. Kosher Salt
2 tsp. Ground Cumin
1 tsp. Dried Oregano
2 tsp. Ground Coriander
1 CAN Kidney Beans ( 15 OZ )
1 CAN Black Beans ( 15 OZ )
1 CAN Pinto Beans ( 15 OZ )
2 CANS Fire Roasted Diced Tomatoes ( 28 OZ )
1 CAN Tomato Paste ( 6 OZ )
2 tsp. Sriracha Sauce
1 Jalapeno ( diced )
1 cup Beer ( chef used Lagunitas beer )
2 Avocados ( sliced for optional topping )
Sour Cream ( optional topping )
Cornbread :
2/3 cup Grapeseed Oil
2 cups Yellow Cornmeal
2 cups All-Purpose Flour
1/2 cup Sugar
1/2 cup Brown Sugar
2 1/2 tsp. Baking Powder
1 tsp. Kosher Salt
2 Large Eggs
1 cup Buttermilk
1 cup Sour Cream
