Toasted Pine Nut & Basil Pesto

My basil this summer has just gone wild. I have been serving basil with everything, drying it out and saving it, and finally I decided to make a pesto. Even though I am the only one who will eat it, I love the stuff. Love it over some pasta, or dipping crackers or chips in it. Here’s my recipe for toasted pine nut & basil pesto. If you find yourself with an abundance of basil just whip some of this up!

1 cup toasted pine nuts
Bunch of basil leaves
6 garlic cloves
2 Tbsp. olive oil
Bunch of basil leaves
6 garlic cloves
2 Tbsp. olive oil
Put all ingredients in a blender or food processor. Blend until combined.
Serve over pasta, or dip crackers or chips in it.
