Homemade tomato soup is so much better than canned, and you can make it with grocery store tomatoes any time of the year. The best flavor will come from ripe summer tomatoes though!

1 tablespoon olive oil
1/2 cup yellow onion
4 cloves garlic
2 cups vegetable broth
2 tablespoon fresh basil
1 teaspoon honey
1/2 teaspoon smoked paprika
1/2 teaspoon salt
