A fudgy, gooey chocolate skillet cookie with semi-sweet chocolate chips, white chocolate chunks, and a layer of salted caramel.

Caramel Sauce
½ cup (90 grams) brown sugar
2 Tablespoons unsalted butter
1 Tablespoon milk
1 teaspoon vanilla extract
¼ teaspoon sea salt

2 cups (290 grams) all-purpose flour
¼ cup (17 grams) cocoa powder (I usually measure then sift)
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¾ cup butter, soft
1 cup (250 grams) sugar
2 large eggs
½ teaspoon vanilla extract
1 cup (6-ounces) semi-sweet chocolate chips (reserve about 2 Tablespoons for topping)
4-ounces white chocolate, coarsely chopped (reserve about 2 Tablespoons for topping)

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
