1 tbsp grated ginger
1 tbsp grated turmeric
2 tbsp thai red curry paste
16 oz baby potatoes
1 red bell pepper
2 carrots
1 1/2 cups coconut milk
2 cups chopped pineapple
1 tbsp soy sauce
2 cups curly kale
1/2 cup roasted peanuts
