A great side or a meal, Truffled Mac and Cheese will surely be a crowd pleaser. My sister first introduced my family to Truffled Mac and Cheese one Thanksgiving. Forget the turkey and stuffing, this is what I wanted to fill up my belly with. Creamy and rich, this mac and cheese is just so satisfying. I have adapted the recipe a bit to suit our tastes… more cheese is always a good thing! To make a meal of it, try crumbling bacon over the top or chopping up pancetta.

½ stick of butter
16 ounces elbow macaroni
3 t truffle oil
¼ c all-purpose flour
½ t smoked paprika
½ t Dijon mustard
2 ¼ c milk
1 ¼ c half-and-half
2 c shredded Gruyère cheese
2 c shredded white cheddar cheese
2 T finely chipped fresh chives
salt and pepper to taste
