Bockwurst is a classic German sausage. This sausage is traditionally made for celebrations and is named after the famous Bock beer it was served with.
1 Pound Ground Turkey
1/2 pound Ground Pork
1/2 cup Heavy Cream
1 tablespoon salt
1 teaspoon white pepper
1/2 teaspoon mace
1/2 teaspoon onion powder
1/2 teaspoon lemon zest
Combine all ingredients with a stand mixer for two minutes on low.
Stuff mixture into 32 mm sausage casings and tie off into five inch links.
