2 tbsp. Olive Oil
1 lb. Dry Pasta ( chef recommends trottole )
3 Garlic Cloves ( minced )
1/2 cup White Wine
1 Sweet Onion ( julienned )
2 tbsp. Dijon Mustard
1 tsp. Lemon Zest
1/2 cup Sun-dried Tomatoes ( julienned )
3 cups Heavy Whipping Cream
5 oz. Baby Spinach
1 handful Fresh Basil ( chiffonade )
to taste Kosher Salt
to taste Freshly Ground Black Pepper
to taste Freshly Grated Parmesan Cheese
