1 tablespoon kosher salt
1 tablespoon light brown sugar
1/2 teaspoon cayenne pepper
4 tablespoons unsalted butter ( 1/2 stick )
1 teaspoon vadouvan, masala, or spice mix of choice
For frying:
Rice bran oil or vegetable oil ( about 4 cups )
Special Equipment:
A digital probe thermometer or a deep-fry thermometer
