1 tbsp salt ( kosher )
1 tbsp sugar ( light-brown )
1/2 teaspoon cayenne pepper
4 cups rice bran or vegetable oil ( for frying )
4 tbsp butter ( unsalted )
1 teaspoon vadouvan, masala ( spice mix of choice )
