Two Chicken Noodle Casseroles

Chicken Noodle casserole is excellent! Here are two versions. the original, which is pretty tough to beat; and an effort on my part to improve it nutritionally.

8 oz.Quinoa noodles
2 large organic, boneless, skinless chicken breasts
2 tablespoons coconut oil
1 chopped leeks or mild onion
2 ribs chopped celery
cup sliced or diced carrot
1 large sweet pepper
3 cloves chopped garlic
1 large carrot chopped
2 tablespoons Parsley
2 tablespoons Montreal chicken seasoning
salt and pepper to taste
2 tablespoons butter
2 tablespoons flour
2 cups organic chicken broth
1 cup parmesan
1 C grated mozzarella cheese
1 C crushed, foccacia croutons for topping
2 large organic, boneless, skinless chicken breasts

Dice into one inch cubes 2 large, organic skinless chicken breasts.
Melt 2 tablespoons of coconut oil in a large skillet, add the chicken on medium low.
Chop the vegetable fine. Add to the chicken.
