I’m not sure why anyone would need an excuse to eat cheese, but if you require one, here you go…. 1. National Grilled Cheese Day is April 12th. 2. This caprese grilled cheese sandwich.

FOR THE MAYO
2-3 spoonfuls of mayo, like Hellmans
8 basil leaves, chopped
1 heaping spoonful, Parmesan cheese
FOR THE SANDWICH
Ciabatta
Heriloom tomato (you can use any tomato, I happen to love heirloom)
Mozzarella Cheese (the ball shape so you can slice as think/thin as you want)
balsamic vinegar
butter
