Ultimate Linguine Bolognese

The ultimate Linguine Bolognese (although feel free to have traditional spaghetti if you prefer). This recipe combines slow cooked rich tomato sauce, with pan fried panchetta, fresh beef and a beautiful blend of herbs. A dash of red wine deepens the flavour all the more.

Recipe:
25 g panchetta or streaky bacon ( cut into small strips )
50 g onion ( diced )
25 g carrot ( diced )
20 g celery ( diced )
1 clove garlic ( minced )
100 g lean beef mince
2 sticks thyme
1 tsp oregano
1 tsp tomato puree
200 g chopped tomatoes ( tinned )
25 ml red wine
slices basil
85 g linguine
10 g parmesan ( optional )
1 tbsp olive oil
