This tasty vegetable chilli recipe is so easy to make and perfect served with rice, tortilla chips and guacamole. This chilli has a Mediteranean twist.

2 tablespoons olive oil
red onion ( Chopped, medium )
red bell pepper ( large, chopped )
carrots ( medium and chopped )
2 celery ( ribs, chopped )
1/2 teaspoon salt ( divided )
4 cloves garlic ( pressed or minced )
2 tablespoons chili powder
2 teaspoons ground cumin
smoked paprika
1 teaspoon dried oregano
to taste tomatoes ( with juices )
2 cans black beans ( 15oz each )
1 can pinto beans ( 15oz )
2 cups vegetable broth ( or water )
bay leaf
2 tablespoons fresh cilantro ( chopped )
1 teaspoons sherry vinegar
to taste cilantro ( chopped for garnish )
to taste avocado ( sliced )
to taste Tortilla chips
to taste sour cream
to taste grated cheddar cheese
